Pro Tips For Olive Oil

Beef & Lamb
Olive oil is excellent. These fattier cuts don't always need yogurt's tenderization, and the oil creates an incredible sear.
Pork
Works beautifully with oil. Pork chops and tenderloin develop a gorgeous caramelized crust that yogurt doesn't have.
Fish & Seafood
Oil is a good choice for fish. Lighter coating, shorter marinade time (1-2 hours), and it won't overpower delicate flavors.
Chicken
This is where yogurt has a real advantage โ€” it keeps chicken breast juicy. With oil, use thighs over breasts and don't overcook.
