A few small adjustments make olive oil sing across every meat.
Beef & Lamb
Olive oil shines. These fattier cuts don't need yogurt's tenderization, and the oil creates an incredible sear.
Pork
Works beautifully with oil. Pork chops and tenderloin develop a gorgeous caramelized crust.
Fish & Seafood
Use a lighter coating and shorten the marinade time to 1-2 hours so the spices don't overpower delicate flavors.
Chicken
Thighs work better than breasts with olive oil — they handle higher heat without drying out. If using breasts, shorten the cook time.
