Sunday Prep, Weeknight Win: The Marinate-And-Forget Method

Here's the weeknight dinner problem: by the time you get home, you're too tired to cook anything interesting. So you default to the same three meals on rotation, or you order takeout, or you eat cereal standing over the sink. None of these options make you feel great.

The marinate-and-forget method solves this in ten minutes on Sunday.

The System

Buy 8 lbs of protein on the weekend. Any combination: chicken thighs, pork chops, beef strips, lamb chops, salmon fillets. Whatever's on sale or looks good.

Put 2 lbs in each container or zip-lock bag — four containers total. One packet makes yogurt marinade for 2 lbs of meat, so mix one packet of Yogurt Marinade Spices with a half cup of yogurt per container. Coat the meat, seal it, and put everything in the fridge.

You now have four different globally-inspired dinners ready to cook. Each one takes 15 to 25 minutes to get on the plate, depending on the protein and cooking method. No recipes. No measuring. No decisions. Just pull a container, cook, and eat.

A Sample Week

Monday: Korean chicken thighs in the air fryer. 20 minutes. Serve over rice with a quick cucumber salad.

Tuesday: Greek pork chops on the grill or in a pan. 15 minutes. Serve with pita and whatever vegetables you have.

Wednesday: Thai beef strips stir-fried with peppers. 12 minutes. Serve over noodles or rice.

Thursday: Moroccan salmon in the oven. 15 minutes. Serve with couscous or roasted vegetables.

Four dinners. Four different cuisines. Ten minutes of total prep time on Sunday. Zero weeknight stress.

Why This Works

The secret isn't organization or discipline. It's that the marinade does all the flavor work while you're doing other things. By the time you cook on Wednesday, that Thai beef has been marinating for three days. The flavor is deep, the meat is tender, and the yogurt has done its job tenderizing and locking in moisture.

The Freezer Version

Move it from the freezer to the fridge the morning of the day you want to cook it. By dinner time, it's thawed, marinated, and ready to go.
