Yogurt Marinade Spice Blend
🇹🇭 Thai
A Little Kick · Gentle Warmth
Inspired by the night markets of Bangkok — where woks flash over open flame and the air is electric with lemongrass, chili, and charred garlic. Lemongrass and kefir lime leaves hit first — bright and electric. Galangal and ginger bring a warm root spice depth underneath. Turmeric gives it a golden color. Coriander and cumin ground the whole thing. Shallots add a sweet, mellow layer. This is our most complex blend — 13 ingredients that still taste clean and balanced. Mix with plain yogurt for a Thai-style marinade.
Thai cooking traditionally marinates meat in coconut milk, not yogurt — both are creamy, mildly acidic, and good at carrying spice. The chemistry is similar enough that the flavors of a Bangkok night market — lemongrass, galangal, kefir lime, turmeric, chili — translate cleanly into a yogurt marinade. What you lose is the coconut sweetness; what you gain is yogurt's stronger tenderizing power, which works especially well on chicken breast and pork. Best with chicken (thigh or breast), pork, or firm white fish. Pairs naturally with jasmine rice, cucumber salad, or steamed vegetables.
