The technique was practical at first: yogurt tenderized tougher cuts of goat and lamb, while oregano and lemon brightened heavier meat. The combination became the signature of Greek cooking. Today every taverna from Athens to Mykonos still uses some version of this marinade — for the same reason it worked four hundred years ago. Best with chicken thighs, lamb chops, or shrimp.
